Kancha Aam Chop

I made Kancha Aam Chop or Chop with raw mango which is very popular in Kolkata and my Mom’s favourite. She loves Kancha Aam.
This chop is best enjoyed with Kasundi or Bengal mustard
In Kolkata, the chop was introduced to lot of famous people of Bengal and India by a shop owner Shaw and since then there has been no looking back

Steps

Boil potatoes, peel and mash
- 2
Wash the Kancha Aam, peel, cut into cubes and boil with 1/2 tsp turmeric powder, salt, set aside and add to mashed potatoes

Add black pepper powder, chaat masala powder, red chilli powder, salt and mash

In a wok heat oil, add the mango potato mash and cook till the mash leaves the surface

Add to a plate and spread to cool it

Give shape

In a bowl add Maida and cornstarch, red chilli powder, salt and mix well

Add the Chop and coat well

In one bowl add water to the flour and make a batter. In another bowl keep the breadcrumbs ready

Take the chop and dip into the batter, coat with breadcrumbs and dip back to the batter and back to breadcrumbs, shape them uniform

In a wok heat oil, add the chop and fry golden on medium flame

Serve with Kasundi and enjoy 😊
