Smashed peas on toast

Because peas are in season here 🥑

Ingredients

1 serving
  1. 1/2 cupfresh peas
  2. a fewcubes of feta or some soft goats cheese
  3. a fewdrizzles of extra virgin olive oil
  4. some finely chopped dill or mint (or parsley or coriander...) - about 1-2 tsps
  5. about 1 tsp zest of (unwaxed) lemon
  6. toast of choice
  7. sea salt and black pepper
  8. optional: a few chilli flakes
  9. optional: poached or soft boiled egg

Cooking Instructions

  1. 1

    Bring a pan of slightly salted water to the boil. Add the peas and cook for 1-2 mins. Drain.

    Mash the peas with the oil, feta and dill/ herb of choice.

  3. 3

    Put the peas on the toast. Top with the lemon zest. Season. Enjoy 😋
