Ingredients

30 minutes
Serves 6 servings
  1. Broth
  2. 1whole chicken breast
  3. 1/2onion
  4. 1 cupsoaked chickpeas (about 200 grams)
  5. 1/2tomato
  6. Salt and thyme
  7. 2 earscorn, cut into pieces
  8. 2potatoes, sliced
  9. 2carrots, cut into strips
  10. 1 cupgreen beans, trimmed (about 150 grams)
  11. 2zucchini
  12. Salt
  13. For serving
  14. 1chipotle pepper in adobo sauce
  15. Diced avocado
  16. Lime
  17. Chopped onion

Steps

30 minutes
  1. 1

    Bring water to a boil with the onion, tomato, and chickpeas. Once it starts boiling, add the chicken breast and skim off any foam or impurities. When the chicken is cooked, add the corn, carrots, and potatoes.

    About 10 minutes before turning off the heat, add the zucchini and green beans.

  3. 3

    Add salt and thyme to taste.

  4. 4

    Remove the chicken breast and shred it.

  5. 5

    Serve the soup with chipotle pepper, avocado, and lime.
