Stir-Fried Chayote Shoots with Garlic

We grew a trellis of chayote vines at home, and the tender green shoots are perfect for picking. I usually boil the young vines, but this time I’m stir-frying them with garlic for a surprisingly sweet and delicious dish.

We grew a trellis of chayote vines at home, and the tender green shoots are perfect for picking. I usually boil the young vines, but this time I’m stir-frying them with garlic for a surprisingly sweet and delicious dish.

Trim the chayote shoots, keeping only the most tender tips. Wash thoroughly. Mince the garlic. Heat oil in a skillet, add half the garlic and sauté until golden. Add the chayote shoots and stir-fry evenly.

Season with 1 tablespoon fish sauce, 1 teaspoon bouillon powder, and 2 tablespoons water. Stir and cook until the shoots are just tender. Add the remaining garlic for extra aroma, turn off the heat, and sprinkle with a little black pepper.
