A friend asked me to create a vegan platter and I wanted to think outside the box

Cut the crust off each slice of bread and slice into bite size pieces. Add into a preheated oven (180degrees) for 10 minutes. In a sauce pan, add sugar and water until it's a gluey texture. Slice the pears very thin and add to the syrup and cook on very low heat for 10 minutes. Once the pear slices are a bit see-through they're ready.

Assemble the pizza by adding the pears first. Make sure you add a tiny bit of the syrup so it's not dry. Then add the onion.

Top off with chopped rocket before serving.
