Makes 12 sopes
  • Dough for sopes
  • 2 1/5 cupsmasa harina (about 275 grams)
  • Salt, pepper, and chicken bouillon powder to taste
  • Warm water
  • 1/4 tablespoonbutter (about 3.5 grams)
  • Ground beef
  • 1 poundground beef (about 450 grams)
  • 1/4 cupchopped onion (about 40 grams)
  • 1/2Anaheim or California chile pepper
  • 1/4 stalkcelery
  • 1/8 bunchcilantro
  • 1 pinchsalt and pepper
  • 1 teaspoonsoy sauce
  • Extras
  • Refried beans
  • Avocado
  • Tomato
  • Lettuce
  • 1/2 cupMexican crema (about 120 ml)
  • Molcajete salsa of your choice
  • Shredded quesadilla cheese
  • Pickled onions

    Knead the masa ingredients until the dough no longer sticks to your hands. Shape into small balls, pinch the edges to form sopes, and fry them.

    Heat a skillet with a little oil. Cook the ground beef, adding the listed ingredients until fully cooked. At the same time, heat the refried beans on another burner.

    Spread refried beans on each sope, then top with ground beef, cheese, lettuce, tomato, pickled onions, molcajete salsa, avocado, and Mexican crema. Serve with your choice of drink and dessert.
