Get large shallow bowl and put in all the spices then mix together for a consistent colour

Take a couple of knobs of butter and melt. Then using a brush spread on to the chicken ensuring both sides are covered

Once the chicken is buttered, liberally spread on to the chicken

Ensure you do both sides of the breast and also the ends. If you have some thick breast then feel free to slice down

Now cook using your chosen method. You can use a hot skillet, you can pan fry with a small about of butter or oil but the best way is on the BBQ for flavour and because this dish can cause a lot of smoke.

It took about 10 mins on my kamado at 350-400F but as always with chicken you have to ensure all juices are clear. Try not to over cook though. You should end up with a black but not burnt coating.

Enjoy with a fresh salad or chips or whatever you want. Great with a bit of mayo if you need to cool the spices.
