This is one of the old traditional recipes... I wanted to share my mom’s way of making mesfouf using store-bought couscous.

This is one of the old traditional recipes... I wanted to share my mom’s way of making mesfouf using store-bought couscous.
Steps

Coat the couscous with about 1/4 cup vegetable oil and mix well until all the grains are covered.

Add water and mix thoroughly so all the grains absorb the moisture. The mixture should hold together when pressed. Cover and let it rest to absorb the water.

Loosen the couscous by rubbing it between your hands or using a fine sieve.

Steam the couscous over boiling water until fluffy, then add a pinch of salt and about 3 tablespoons of oil. Sprinkle with water and let it absorb.

Steam the couscous a second time, sprinkle with water, let it absorb, and repeat for a third time. If needed, sprinkle with more water and let it absorb.

For serving, steam the couscous a fourth time, then add the butter, powdered sugar to taste, and pomegranate seeds.
