Place water in a metal bowl or glass measuring cup

Sprinkle gelatin on top and let it sit for about 5 minutes or until it blooms

Set metal bowl over simmering water until the gelatin melts

Mix in glucose and glycerine

Add in shortening until it is melted (add color and flavor at this point)

In a big bowl place the icing sugar in and make a well in the center. Add the gelatin mixture and mix with a wooden spoon that was greased with shortening

Mix until it comes together. Transfer the dough to a work surface. Kneed until smooth

Wrap in cling film and store in room temperature
