This crispy fried catfish is served with a mixed salad and sauce.

Cut the catfish into pieces and remove the bones. Rinse and pat dry. Crack the egg into a bowl, add a pinch of salt, and beat well. Coat the catfish pieces in flour, then dip them in the beaten egg, and finally coat them with panko breadcrumbs. Heat oil in a nonstick skillet. When the oil is hot, fry the catfish pieces one at a time. Use just enough oil to avoid deep frying. Once the fish is golden brown, remove and drain on paper towels. Serve with a mixed salad and sauce.
