Thalipeeth is a type of savoury multi-grain pancake popular in Maharashtra. The dough is prepared from flour of rice, wheat,bajra etc. Onion, fresh coriander and other vegetables and spices are added. Base on added ingredients, thalipeeth are of different types. Today I am sharing one of my favourites, Cucumber or kakdi thalipeeth.

The dough is prepared from flour of rice, wheat,bajra etc. Onion, fresh coriander and other vegetables and spices are added. Base on added ingredients, thalipeeth are of different types. Today I am sharing one of my favourites, Cucumber or kakdi thalipeeth.

Wash and clean the vegetables.

Peel and grate cucumber or kakdi.

In a bowl combine grated cucumber, chopped green chilli, chopped onion, chopped coriander leaves, cumin seeds, coriander seeds,salt and sugar and give it a good mix.

Let it rest for 5-10 mins. Cucumber tends to secrete water with time.

Now add rice flour, semolina and mix well.

Add water in batches to make a thick batter.Depending on how much water is secreted by cucumber you will need to add water.Keep aside for 15-20 minutes.

Heat a pan and grease it with oil.

Place 2 tablespoons of batter to the hot pan.

Make a hole at the centre of the thalipeeth. Also make some more small holes as shown in the picture. This is the way how traditional thalipeeths look like.

Smear some cooking oil/ghee and roast in medium heat on both sides to light golden brown.

Remove to a plate and roast other thalipeeths exactly like the previous one.

Serve these delicious and healthy thalipeeth with some homemade curd.
