Unroll the puff pastry, trim the edges to make them neat, and cut each sheet into 4 strips.

Slice the apples into thin half-moon shapes. Place them in a bowl, pour in the lemon juice, and toss to coat. Microwave the apple slices for 4 minutes to soften them and make them easier to roll.

Mix 2 tablespoons of water into the apricot jam. Brush the jam mixture onto the pastry strips. Arrange the apple slices along each strip, overlapping slightly. Fold the pastry over the apples and roll up each strip.

Lightly sprinkle with cinnamon.

Bake at 350°F (180°C) for 35 to 40 minutes.

Dust with powdered sugar to decorate.
