Remembering my grandmother’s croquettes, I made these from memory since there was no written recipe. They turned out delicious—nothing was left! I used Swiss chard from my own garden.

Drain the Swiss chard well, removing as much liquid as possible. Sauté the chopped onion and red bell pepper in oil.

Add the seasonings and fine herbs seasoning.

Add the Swiss chard and cream cheese, mix well, and remove from heat.

Add the eggs, grated cheese, and flour. Mix everything well. Fry spoonfuls of the mixture in hot oil, but not too hot, so they don’t cook too quickly on the outside.

Serve and enjoy.
