I love a challenge and this weeks #mysterybag2 was that. we have quite a few working from home at the moment. Also some items are low on the shelves. this soup is so quick and simply and uses the bitn bobs you may have in the bottom of your fridge and may even throw out. so reduce waste and enjoy.

Ingredients

1 cup of pea
4 servings
  • 2 cupsbroccoli including the stems
  • 2 cmwedge of blue cheese I used gambozola
  • 1/2 cuppeas
  • 1 tsponion powder
  • 1chopped clove of garlic
  • salt and white pepper to season
  • pinchbicarbonate of soda
  • 1chicken or veg stock cube

Steps

1 cup of pea
  1. 1

    Chop the broccoli steam and sweet of in the pan add the seasoning and spices

  2. 2

    Add enough water to cover and the the veg stock and bring to the boil.

  3. 3

    Add the bicarbonate of soda. this helps to cook the stems and keep the green colour. when soft top up the liquid

  4. 4

    When cook blend. now add the broccoli florets and cheese, cook thisnot to long and blend again. this time add the peas the heat of the soup will cook the peas and the colour should stay

  5. 5

    I served mine with a little cheese on toast and roasted broccoli on tom
