Separate big chunks of flowers from cauliflower. Wash well and take out in a double boiler. Steam cook them till they are tender. Do not overcook them.

Combine mint leaves, coriendar leaves, coriendar seeds, jeera, ginger, tomto and garlic in a blender jar. Make paste

Heat oil in a pan. Add asafoetida and chat masala. After a few seconds add the green paste and turmeric powder. Fry till oil oozes.

Add steamed flowers and a glass of water. Combine lightly and simmer till the gravy reaches desired consistency. Add salt only if required. Add ghee, cover the pan and remove from heat. Serve hot with roti, Puri or nan.
