Fry sliced large onion until golden. Add carrot peices. Pour in 200ml red wine, 150ml water and a 400g chopped tomatoes, then crumble in 2 vegetable stock cubes. Add lots of thyme. Add lentils and water.

Meanwhile boil sweet potatos whole, after about 30 min, mash. Add butter and mustard

Combine into a dish, add cheese and oven for 20 mins
