Purple Baigan Bhaja
Steps

Take a bowl add water and salt. Cut brinjal in circles and soak in salt water for 5 mins. Strain the water and keep brinjal on kitchen towel so it can soak all water from brinjal.

Take plate add gram flour, green chilli paste, salt, red chilli powder, garam masala, turmeric powder.

Mix it all well. Add coriander leaves. Mix it. Now take brinjal slice in the gram flour mix. Press with hand so flour mix will stick to the brinjal.

Press and flour will stick to both the side. Make all slices ready.

Now take a grill pan on low flame. Add oil spread all the side. Put brinjal slices one by one in the hot pan and let get golden from one side. Flip it to other side and get golden from another side too.

Now serve hot with salad and green Chutney.
