Ingredients

  • 1 halfcourgette, roughly chopped
  • 3medium carrots, peeled and roughly chopped
  • 2medium potatoes, peeled and chopped
  • 1medium onion, roughly chopped
  • 1garlic clove, peeled whole
  • 1 tbspbutter
  • Salt to taste, optional
  • 3-4 cupswater
  • 30 mlmilk

Steps

  1. 1

    Add everything to a saucepan, except the butter and milk and bring to the boil.

  2. 2

    Reduce heat to medium low and simmer for 30-35 minutes or until vegetables are soft.

  3. 3

    Cool slightly, add the butter and milk and blend until smooth. Add more milk if too thick.
