Aromatic fish and vegetables soup

I have decided to post this easy healthy soup as it has ginger, garlic and turmeric in addiction to veggies. We need to consume more vegetables and spices to help us against corona 19 virus. I live in Indonesia and I used indonesian Ikan Patin( transleted to catfish) but I think dory fish or snapper will be fine as well. Serve this with steamed jasmine rice.South east asian /chinese celery has better aroma and has more leaves compare to western celery and more suitable for this soup. If you do not have access to lemon grass and lime leave, replace them with one teaspoon of lemon rind.

Ingredients

45 minutes
4 servings
  • 600 gfish fillet, cut to big pieces
  • 1medium size onion, finely chopped
  • 3 clovesgarlic, finley chopped
  • 3 cmfresh ginger, grated
  • 3carrots, cut to thin cirlces
  • 1 cupchopped celery(including leaves)
  • Halfcup spring onipns chopped
  • 2tomatoes, cut to wedges
  • Canola oil
  • Black pepper
  • Salt
  • Canola oil
  • Halftea spoon turmeric powder
  • 1 tea spooncorriander powder
  • 2bay leaves
  • 2lime leaves(indonesian daun jeruk)
  • 2lemon grass(white part bruised)
  • Fresh limes to serve

Steps

45 minutes
  1. 1

    Heat oil in big pot. Saute onion, after few minutes, add garlic and ginger. Saute few seconds. Now add bay leaves, lime leaves and lemon grass. After seconds add turmeric and corriander powder. When you feel the aroma of spices add carrots and celery and enough water.

    Cover the pot and let it simmer for 30 minutes. Now add fish fillets, tomato wedges, black pepper and spring onions.

    Cover the pot and let it simmer for about 20 minutes. Do not overcook the fish. Serve the soup with fresh lime and steamed white rice.
