Sambal Potatoes with Balado (Stink Beans, Chicken Liver, and Gizzards)

Clean the chicken liver and gizzards, then boil until tender. Drain and cut into small pieces (as desired).

Clean the potatoes. Cut into small cubes (cube size as desired). Then fry (do not overcook/dry/soften).

Blend shallots, garlic, and red chili peppers, adding enough water before blending (to make the blending process easier).

Clean and cut the stink beans (as desired).

Heat cooking oil (as needed) in a pan. Once hot, add the blended ingredients. When fragrant, add coconut milk and cook until boiling. Add salt and granulated sugar to taste. Adjust seasoning.

Add the stink beans (I cook them just until slightly softened). When the sauce is almost dry, add the potatoes and stir until well mixed. Once the potatoes are evenly coated with the sauce, add the liver and gizzards, stirring until well mixed and cooked. Remove from heat and serve. Enjoy!
