Prep the spring onions, garlic, peppers and sun-dried tomatoes

Heat the pan and sprinkle some salt and pepper. when hot place the thighs, skin side down, for a few mins then turn. Brown the meat for 5 to 10 more mins. Remove from the pan and set aside.

Add the onions, and garlic in the pan you removed the chicken from. Fry until opaque, then add the peppers and tomatoes

Add the rice and the spices and stir fry for a few mins. The rice will become opaque and the spices will start to become fragrant. Add the stock, salt and pepper and stir well.

Add the chicken to the pot, pushing them down into the mixture and give the pan a shake. If you are transferring into an oven proof dish, after add the stock and mixing through the rice pour the mixture into the ovenproof dish and add the chicken thighs, again, pushing them into the mixture.

Bake in the oven for 30 mins on 220c degrees. Rice should be cooked and chicken will be brown on top.
