Fry the cashew nuts and set aside

Cube and fry the paneer & set aside

Fry the onion for 1 minute then add the garlic & ginger and fry for 1 minute

Add the spices and fry for 1 minute

Blanch the spinach in boiling water for 10 seconds then squeeze out excess water and pat dry.

Add the paneer, cashews and spinach to the spices. Simmer for 10 minutes. If a creamier taste is preferred add 50ml Greek yoghurt.

Serve with rice and naan bread
