Chop the guanciale. Keep all the fatty bits and chop up the meaty bits. Bring a pot of salted water to the boil and cook pasta according to instructions

Now heat oil in a pan. Add guanciale fatty bits and let it release its flavour. Then add the onion and remove the fatty bits. Now add the mushrooms and meaty bits. When the mushrooms release their water add a Glug of white wine and let it evaporate

Let the sauce bubble away and add a ladle of pasta cooking water. Drain pasta al dente and add to sauce. Mix and serve with fresh parsley 😀
