Here’s another recipe I make using leftovers from cocido. Of course, it’s one of Mom’s recipes, with that Canarian touch we love at home.

First, sauté the chopped green onion and crushed garlic in olive oil. When the onion is soft, add the crushed tomatoes. The amount of tomato will depend on how much cocido leftovers you have.

While the onion is cooking, shred the beef and chicken, and place them in a pot with the chickpeas.

Add the bay leaf, salt, cumin, and a splash of white wine to the sauté. Stir a couple of times, then add everything to the pot.

Stir and cook over medium heat for about 15 minutes.

Serve with diced fried potatoes. Enjoy!
