Ingredients

  1. Cake
  2. 1 3/4 cupssugar
  3. 2 1/2 cupscanned fruit cocktail, drained
  4. 2eggs
  5. 1 tspvanilla
  6. 2 tspbaking soda
  7. 1 tspsalt
  8. 1/2 tspnutmeg
  9. 1/2 tspcinnamon
  10. 2 cupsflour
  11. Topping
  12. 1 cupsugar
  13. 1/2 cupbutter
  14. 3/4 cupcream
  15. 1/2 cupshredded coconut
  16. 1/4 cupwalnuts

Cooking Instructions

    Preheat oven to 350 degrees F

    Mix cake ingredients by hand

    Bake in greased 13x9 pan 40-45 minutes (when I looked for this recipe I found two copies, the other said 35-40 minutes at 325 degrees F. I don’t remember which is correct, but I think this version is. Maybe check a little early on color, toothpick test. I’ll,update recipe the next time I make it.)

    Topping is similar to a German chocolate cake topping. I usually add more coconut and nuts than this recipe shows.

    Mix sugar, butter, cream. Bring to boil, stirring frequently, 10-12 minutes.

    Add coconut and walnuts. Stir, spread over cake.
