Egyptian Koshari

This is the national dish and most famous and loved dish of Egypt. It is also common in street foods.
We can call it Khichri in Urdu.. But their way of serving is a little different and my family loves Middle Yeast cuisine so we love this dish. It is very easy to make. And if you like more spices, you can add red chilli flakes or red chilli powder in the tomato soup which is called ‘Dakous’ in Arabic.
It is served in two ways, either make the lentil and rice separate or mix them and make a Koshari already.
The macaroni size is preferred small rings one but due to quarantine I couldn’t avail it. But the elbow shape is also used commonly.

Ingredients

30 mins
9 person
  • 3 glassrice (soaked)
  • 1 1/4 glassbrown lentil (daal masoor)
  • 4 tspgaram masala
  • to tasteSalt
  • 1/4 cupoil
  • 4 1/2 glasswater
  • 2 tspcrushed coriander/ coriander powder
  • For serving:
  • 1/2 packetboiled macaroni
  • 3 cupstomato sauce
  • 1 cupfried onion slices
  • 1/2 cupboiled chickpeas

Steps

  1. 1

    In a sauce pan par boil the lentil (daal masoor). It should be 3/4 done.

    Meanwhile boil the macaroni and keep aside.

    Make the tomato sauce (blend the 9-10 tomatoes and half onion. add salt and red chilli flakes according to taste and cook on medium low flame. Add 1/2 cup water and cook for 5 minutes)

    Now in a big pot/ wok add oil and spices and sauté for 30 seconds. Then add water, rice and lentil. Cook on medium low flame. When bubbles appear, cover and cook on lowest flame for 7-10 mins.

    Meanwhile cut 3-4 onions into slices and deep fry till brown.

  6. 6

    Assemble everything in serving dish. Garnish with boiled chickpeas.
