This cake doesn't contain any dairy. When I first got the recipe, it seemed a bit unusual, but I decided to give it a try—and I'm glad I did! It turned out moist, fluffy, and packed with flavor. I'll definitely make it again.

Preheat the oven to 350°F (180°C).

Blend the whole orange, including the peel, in a food processor until it forms a creamy mixture, about 30 seconds.

In a separate bowl, beat the eggs with the sugar until the mixture is pale and has doubled in volume. Sift in the flour and baking powder, folding them in gently with a spatula.

Once the flour is well incorporated, add the oil and continue mixing. Then add the orange puree and mix well.

Line a baking pan with parchment paper and pour in the batter.
