For momos sheets in a bowl seive all purpose flour (maida) and salt,mix well, add water as needed to knead make a dough and cover it let it rest for 45 min.

Lets prepare the filling.

In a pan add 3tsp oil,add ginger paste, chopped onion,shredded cabbage, spring onion greens and any other filling u wish to have in ur momos u can make paneer onion filling, soya granules filling according to your taste....

Now add a 1/2 tsp salt,black pepper powder, and a dash of vinegar

Don't over cook. Let it be crunchy.switch off the flame

And keep it aside to bring down at room temperature

Now take out your dough.knead again for 2-3 min. And take a small potion and start rolling using rolling pin to almost medium thin circle. around 4 – 5 inch in diameter. make sure you roll from sides and keep the centre slightly thick.

Now place a heaped tbsp of prepared stuffing in the centre.
start pleating the edges slowly and gather everything.

Press in middle and seal the momos forming a bundle. You can try other shapes too.whichever is convenient.
heat a steamer and arrange the momos in the greased tray without touching each other

Steam momos for 10-12 minutes or till shiny sheen appears over it.

For marination

In a bowl add hung curd(around 1 cup),fresh cream 1 tbsp.add crushed garlic,tandoori masala,few drops of lemon juice,edible red colour(optional)

Marinate steam momos properly and keep them covered for about 1 hour

Till then u can heat up ur tandoor or chulha....

I have electric tandoor so i pre heated for 8 -10 min.before i place my marinated momos in it

U can barbeque them on gas stove also

Just place them into barbeque skewers u can add big diced onion and capsicum in ur skewer and roast them on low medium flame

Plate them nicely and serve hot with mint chutney, mayonnaise and red chilli chutney

Sprinkle some chat masala over ur tandoori momos
