Wash sweet potato, divide it in four and peel it.

Place in cooking pot with enough water just to cover the potatoes slightly. Boil till fork tender. Set aside to cool.

Store in fridge overnight. This helps it to be very firm and attain a golden crust when cooking the next day. If you dont have that much time cook right away.

Cut the boiled potatoes 1 inch wide slices.

In a non stick skillet put one tablespoon of oil on medium low heat. Place the sweet potoes in three batches. Don't crowd your pan.

Cook for 2-3 minutes until golden and turn. Cook each side until nicely golden.

Plate your potatoes with your favorite salad or sauce. Sprinkle some black paper on your mayonnaise and some lemon on your potatoes for a nice tangy taste.
