Risotto al lampone raspberry risotto

Wash raspberries. Soak in wine for about an hour. Then, cook onion in some olive oil for a couple of minutes until soft. Then add rice and continue cooking for another couple of mins

Now pour in the wine and raspberries, let the wine evaporate. Mix and add about 3/4 of the stock or enough to cover the rice. Bring to a simmer stirring frequently. The raspberries will gradually break down.

Keep adding more stock as needed. After about 20 mins the rice should be about cooked. Now add butter and parmesan. Stir for a couple of mins until creamy. Add salt to taste and serve 😍
