Soak rice for 20 minutes. Take a mixer jar, put garlic and ginger and grind to a fine paste.

In a cooker, pour oil and ghee, add Bay leaf, cloves, cardamom, fennel seeds and add onion. Cook till golden colour. add ginger garlic paste then add tomatoes and then add vegetables.

Add mint leaves, coriander leaves, turmeric powder, chilli powder, garam masala, curd, salt and rice. cook on a medium flame for 4 whistles. Veg Biryani ready to be served.
