Easy Tomato Pickle

An easy and a mouthwatering pickle recipe from my grandmother's chest of goodies. It is a yummy side dish or an accompaniment to the boring meals. This can be made when tomatoes are in season and relished with simple boiled rice, ghee and poppadoms. Made instantly and without the long process of sun drying involved in the traditional method. It also stays fresh for a long time if stored in the freezer. You can double or tripe this recipe or even reduce it to half according to your needs and make. The best part is that it stays good upto 20 days in the refrigerator. Also use a dry and clean spoon always as a precautionary measure to avoid it from getting spoilt. Happy Pickling!

Wash all the tomatoes, pat dry and chop fine. In a pot, heat Oil and add the chopped garlic. After half a minute of sauteeing, add the tomatoes. Cover and cook on high heat. Keep checking and stirring in between. After about 10 minutes, the tomatoes would have become tender.

Switch off the heat and add the Red Chilli powder and Salt. Mix well and blend it. Dry roast the ingredients listed for just a minute and add powder them. Add the powder to the blended pickle. Keep the tempering ready for mixing but not before cooling it.

Add the tempering, that has been brought to the room temperature, to the pickle and mix well. Oil can be adjusted accordingly. If needed, more smoked oil can be added to it after a few days if desired but it should be brought to room temperature before mixing.

This pickle stays fresh up to 20 days in the refrigerator and upto two months in the freezer. Serve with meals or any of your favourite Breakfast items like Idlis, Dosas, Uttappams etc.
