# PODA PITHA
Poda Pitha is an authentic Odia cuisine
my grandmother used to make during a festival in Odisha. Traditionally the dough is wrapped in banana leaves and baked overnight in a clay oven on very low heat and served as a breakfast next day. Baking it overnight gives it a slightly burnt exterior and at the same time a distinct crispy edges with a soft middle, hence the name Poda Pitha.
But my version is a lot shorter and can be out of the oven just in an hour. This Poda Pitha is a delicious combination of basic ingredients like raw rice, coconut, jaggery spiced with fresh ginger, cardamom, clove and whole black peppercorns. Ghee, some kind of nuts, sliced coconut and/make your home smell FESTIVE.

Grind both and mix it well to a thick batter

Add grated coconut,jaggery,salt,baking soda,tooti frooti, fennel seeds to the batter and mix well.

Take a Pan and put some ghee/ oil. Then fry the coconut slices and cashew nuts for about 2 minutes.

Add the fried coconut slices and cashew nuts to the batter.

Mix all the ingredients well.

Take a cooker.Apply ghee/oil to it and then pour the batter.

Close the lid of the cooker without whistle.

Cook for 45 minutes in simmer flame.

Now the PODA PITHA is ready. Cut into desired shapes.
