Ingredients

  1. 2 1/4 lbspork steak
  2. 0.35 ozachiote paste
  3. 2/3 lbfresh pineapple
  4. 1/3 lbred onion
  5. 0.35 ozgarlic
  6. 3/4 cuppineapple juice
  7. 1 ozguajillo chili
  8. as neededOlive oil
  9. as neededSalt
  10. as neededGround black pepper
  11. 2.2 lbssmall taco tortillas
  12. as neededLime

Steps

  1. 1

    Roast, deseed, and clean the guajillo chilis, then soak them in boiling salted water until they soften. Blend the chilis, achiote, and pineapple juice.

    Heat olive oil in a saucepan and thoroughly brown the pineapple cubes, diced onion, and whole peeled garlic.

  3. 3

    Add the blended mixture to the ingredients and cook on low heat for about 15 minutes. Blend the preparation again, strain, and set aside.

  4. 4

    Season the pork with salt and pepper, and marinate with the previous mixture for at least 2 hours. Form the meat into a spit and cook.

  5. 5

    Slice the meat and make tacos with warm tortillas. Serve with your choice of salsas, limes, and fresh pineapple mixed with onion, serrano chili, salt, pepper, and lime.
