Season haddock with salt, pepper and smoke paprika powder.

Dice potato to make it easier to cook. Boil it for 15 minutes, turn off the heat then mashed the potato while adding butter, salt and pepper into it. After that, pour the milk until the potato smooth and creamy.

For the brown butter sauce, add the butter into a silver pan (to control the color if the butter) with low heat. Wait until the butter melt and turn the color into brown. The smell is so nutty. Be carefull not to burn the butter! Then turn of the heat, add salt, pepper and touch of lemon juice, stir it.

Prepare the fish by seasoning it with salt, pepper and smoke paprika. Add oil to the hot pan (high heat) then add the fish. Fry it for 2 minutes each side.

Final step, place the haddock on top of mashed potato, add the brown butter sauce to the haddock and springkle it with parsley.
