Bring a pot of salted water to the boil and cook pasta according to instructions. Chop the onion and cook gently in olive oil whilst you slice the courgette thinly. When onion is soft, add the courgette and saffron. Cook for about 2 mins on medium heat

Now add the wine and let it evaporate. By now the pasta should be just about done so add a good ladle of water to the sauce. Drain pasta and add to sauce. Give a mix then add the cheese, mix again and serve
