Ingredients

40 minutes in total preparation n cooking time
3 -4 servings
  1. 2 cupsQuinoa-
  2. 1 tsp peas,\
  3. 1 tsp carrots,
  4. 1 tsp capsicum,
  5. 1 tsp bell peppers,
  6. 1 tsp cucumbers
  7. 1 tsp tomatoes
  8. to tasteSalt-
  9. 1 tsp black pepper
  10. 2-4 Mint leaves
  11. 1 tbspFresh coriander leaves
  12. 3-4 tspOlive oil-
  13. 3-4 tspLemon juice-
  14. 2 tspdried parsley
  15. 1 tsp mixed herbs

Steps

40 minutes in total preparation n cooking time
  1. 1

    Take a pan, add 4 cups water bring it to boil.

  2. 2

    Wash quinoa and add to water,add salt and pepper.

  3. 3

    Wash and chop veggies into small chunk size pieces.

  4. 4

    Add peas, carrots and capsicum to the boiling quinoa. Cook till tender.

  5. 5

    Remove from fire and let it cool.

  6. 6

    Now add chopped cucumbers tomatoes and bell peppers. Add olive oil and herbs and lemon juice and mix it gently.

  7. 7

    Add fresh mint and coriander leaves and serve.
