Courgette fritters
I planted a little courgette seed a few months ago, and now I've ended up with loads and loads of delicious courgettes! This was on my must-try-courgette-recipes list, and we we're not disappointed. I served these with some yoghurt sauce with dill.

I planted a little courgette seed a few months ago, and now I've ended up with loads and loads of delicious courgettes! This was on my must-try-courgette-recipes list, and we we're not disappointed. I served these with some yoghurt sauce with dill.

Grate the courgettes and sprinkle the salt over them. Leave for 10 minutes and squeeze out as much water as possible.

Mix all of the ingredients in a bowl.

Spoon the mixture straight into a hot frying pan with plenty of oil. Fry for a few minutes on each side and then let them dry a bit on some kitchen towel.
