Ingredients

4 Servings
  • 2 TbspTeff Flour or any Flour of your choice
  • 4Chicken Breasts
  • 1large Red Onion
  • 2 stalksCelery
  • 2medium size Carrots
  • 3 clovesgarlic
  • 2 tspOregano
  • 2Bayleaf
  • 1 tbspTomato Purée
  • 1 tinchopped Tomatoes
  • 1 pintbrown chicken stock
  • 1/2 pintwhite wine
  • Zest of 1 lemon
  • Handfulchopped parsley
  • Rapeseed oil
  • S&P

Steps

  1. 1

    Finely dice Carrots, Celery, Onion & Garlic.

  2. 2

    Season the chicken & lightly coat in the flour.

  3. 3

    Brown the chicken in a hot pan for 3 mins on each side then set aside. Turn heat to medium.

    Add the vegetables & herbs, cook for 8 mins still starting to soften. Add tomato purée cook for a further few minutes. Turn up heat & add white wine & reduce by half.

    Add tomatoes & stock & bring to the boil.

  6. 6

    Place chicken back in the pan & simmer for 20/30 mins. When chicken is cooked on point remove & set aside. Boil sauce rapidly till it starts to thicken.

    When ready season & serve with lemon zest & parsley
