Coated Peanuts

Wash and soak the peanuts for 20 minutes

In a bowl, beat the eggs, mix in the baking powder and sugar and set aside.

Mix the flour, cayenne pepper and salt and set aside.

Drain and dry the peanuts.

Mix the peanuts with two tablespoons of the egg mixture and thoroughly mix in nuts.

Gradually mix in the flour until all the nuts are evenly coated and separated from each other. Set aside for 8 to 10 minutes.

Heat oil and put in the nuts to cook on medium heat. Keep stirring the nuts until they turn golden brown.

Cool and store in an airtight container.
