Steps

Season the steaks with salt and pepper and lay flat

Chop the garlic, chives, shallot, parsley and rosemary then mix together with the olive oil. Spread the mixture evenly on the flat steaks

Slice the cheese into thin slices and lay across the steaks

Tightly roll the steak slices up and secure with a skewer or cocktail stick. If your steaks are uneven then roll from the thin end first.

Preheat the oven to 180°c, gas mark 4

In a pan heat some olive oil and seal the steaks for 2 minutes each side

Transfer to an oven proof dish and cook for 12 - 20 minutes, depending on how you like your steak. 12 mins for rare, 16 mins for medium, 20 mins for well done.

Remove from the oven and rest for 10 mins under tin foil

Sprinkle a few chives over the steaks and serve with herby new potatoes and pea shoot salad.
