Za'atar Couscous

Steps

Toss the couscous with your hands, gradually adding water.

Gradually add the ground za'atar, then add a little oil.

Place the couscous steamer (couscoussier) over a pot filled with water and steam the couscous until steam begins to rise through it.

Remove from heat, sprinkle with a little water, and add some salt.

Place the raisins and dates (or dried figs) in the bottom of the steamer, then add the couscous on top and steam again over the stove.

Remove from heat, add some powdered sugar to taste, and serve.
