I love the simplicity of good Mediterranean food. I had a dish very similar to this in a taverna when I visited the Greek islands years ago and I love the natural flavour combo. The lemon juice partly cures the fish so go gently on the cooking of it, it doesn’t need much! #Grease #globalfoodtour

Mix together the oil, lemon zest and juice and olive oil. Place your salmon fillets skin side up in the marinade and work some of the oil into the sides of the fish. Leave in the fridge for 2 hours.

Put the salmon fillets into a large square of tin foil and close it up to form a loose but tightly sealed parcel. Bake at 175 C for 15 minutes. Check the fish is cooked and serve!
