Vegetable Chop is more or less a regular in a Bengali family household and with Kasundi it goes very well. All flavours of Beetroot, Carrots, Potatoes and Capsicum

In a pressure cooker add potatoes, beetroot, carrots and add water and bring it to pressure for 4 whistles to boil all vegetables. Cool and peel the skin of potatoes. Mash all vegetables and set aside to cool.

In a wok heat oil and add panchphoron. Add the mashed vegetables and fry for couple of mins. Set aside.

Add roasted cumin powder, red chilli powder, garam masala, salt, raisins and mix very well. Add besan to give a shape.

In a different bowl add besan and little oil, salt and water to make the batter. Set aside.

Make oblong shapes to the vegetable mix. You can choose your own shapes. Dip in the besan batter.

In a wok heat oil and fry the Vegetable chops in batches and fry until golden in colour.

Plate with Kasundi and enjoy hot.
