Wash the caul fat thoroughly with water, vinegar, and lemon juice. Let it soak, then rinse again and cut it into squares according to the desired size.

Shape the kofta into logs, wrap each with a piece of caul fat, and arrange them in a greased baking pan. Bake in the oven, turning to brown all sides. Remove and serve with parsley.
