Ingredients

  • 2.2 lbsground beef or lamb (1 kilogram)
  • Beef or lamb caul fat
  • 1.1 lbsfinely chopped onion (1/2 kilogram)
  • 4garlic cloves
  • Salt and black pepper to taste
  • 1 teaspooncumin and coriander
  • Chinese kebab spice (kababa siniya)
  • Pinchnutmeg
  • Pinchground cardamom
  • Sumac
  • Parsley for garnish

Steps

    Season the ground meat with all the listed ingredients and let it rest in the refrigerator for at least 1 hour.

  2. 2

    Wash the caul fat thoroughly with water, vinegar, and lemon juice. Let it soak, then rinse again and cut it into squares according to the desired size.

  3. 3

    Shape the kofta into logs, wrap each with a piece of caul fat, and arrange them in a greased baking pan. Bake in the oven, turning to brown all sides. Remove and serve with parsley.

  4. 4

    Alternatively, you can thread them onto skewers and grill over charcoal, or cook them on an electric grill or grill pan.
