Brad's reverse chili Colorado burritos

I call this a reverse burrito because it is just black beans and Mexican rice inside. And then smothered with all the goodies. I made this in an electric pressure cooker to save time. I also used canned enchilada sauce to save time as well.

I call this a reverse burrito because it is just black beans and Mexican rice inside. And then smothered with all the goodies. I made this in an electric pressure cooker to save time. I also used canned enchilada sauce to save time as well.
Cooking Instructions

Combine the 2 flours and spices for the Colorado in a large ziplock bag. Shake well to mix.

Heat oil in a large frying pan. Add beef to the bag and shake well to coat. Knock off extra flour and fry in batches until browned. Do not overload the pan. When done, add the beef to the pressure cooker.

Add to the pressure cooker the rest of the ingredients for the sauce. Secure top and pressure cook for 50 minutes. When done season further yo taste.

When beef is done, toast tortillas in a dry pan. Fill with rice and beans. Roll up. Top with plenty of the chili Colorado and desired toppings. Serve immediately. Enjoy.

FYI: Most Hispanics in Mexico don't wrap their foods up in a tortilla, "burrito style," like the US does unless they're on the run. What they will do at sit down meals is take warm flour tortillas - rip off a large piece and place their ingredients in a two bite sized portion and feed upon their dish that way. [see final photo] But, either way you choose to serve them is entirely up to you!This recipe may take some time but it's definitely worth your efforts! My seven year old students were up at 4:30 a.m. yesterday morning marinating pork and their efforts did not disappoint! Excellent work kiddos! In fact, they fed the homeless with them!Know that this dish is much better the following day and it freezes well for up to two months. Well skunkmonkey101, all of your hotdog recipes finally got to me... all joking aside, I made this as a very large batch. Then individually froze on baking sheets. Made a batch of chili, and froze in small cups. Great after school snacks. I used 3 kinds of dogs. Cheddarwurst, jalapeño cheese smoked sausages, and German smoked sausages. I cooked in a deep fryer.
