I call this a reverse burrito because it is just black beans and Mexican rice inside. And then smothered with all the goodies. I made this in an electric pressure cooker to save time. I also used canned enchilada sauce to save time as well.

Ingredients

  1. For the chile Colorado
  2. 3 lbsbeef stew meat
  3. 1 1/3 cupsflour
  4. 2/3 cupcorn flour
  5. 1/2 tspeach salt, pepper, cumin, chili powder,
  6. For the chili Colorado sauce
  7. 2 (29 oz)cans red enchilada sauce
  8. 1/2 tspeach salt, pepper, cumin, chili powder,
  9. 1small can green chiles
  10. 2 tbsminced garlic
  11. 2-3 tspgranulated beef bouillon
  12. Pinchcinnamon
  13. 1/4 cupchopped cilantro
  14. 1/2onion, chopped
  15. Toppings and filling
  16. Prepared black beans
  17. Prepared Mexican rice
  18. 10 inchtortillas
  19. Chopped cilantro
  20. Avocado
  21. Shredded pepper jack
  22. Chopped onion
  23. Sour cream
  24. Lime wedges

Cooking Instructions

    Combine the 2 flours and spices for the Colorado in a large ziplock bag. Shake well to mix.

    Heat oil in a large frying pan. Add beef to the bag and shake well to coat. Knock off extra flour and fry in batches until browned. Do not overload the pan. When done, add the beef to the pressure cooker.

    Add to the pressure cooker the rest of the ingredients for the sauce. Secure top and pressure cook for 50 minutes. When done season further yo taste.

    When beef is done, toast tortillas in a dry pan. Fill with rice and beans. Roll up. Top with plenty of the chili Colorado and desired toppings. Serve immediately. Enjoy.

cooking is a passion of mine. I started when I was very young and I had to drag a milk crate around to see over the counter. taught by a career cook (my grandmother ). I have always tried to push the boundaries of conventional cooking. I prefer cooking wild game. when I can get my hands on it, but fish is more readily available for me. I raise and butcher most of the livestock that I use for my conventional recipes. I hope everyone can find a few recipes they like in my list.
