Make the stock. Cook onion gently in olive oil. When soft, add some fresh thyme leaves. Now add rice and toast the rice for about 2 mins. Then add wine and let it evaporate

Now add about 3/4 of the stock, enough to cover the rice. Simmer gently stirring frequently. Now add the passata and salmon

Continue stirring and adding more stock as needed until the rice is cooked. This should take about 20 mins in total. At the end of cooking time, add a good knob of butter, season to taste and stir for another min or so until creamy. Serve 😍
