These chicken pitas are so light and fresh and oh so easy!

Ingredients

4 servings
  1. 4medium plum tomatoes, chopped
  2. 1/4small sweet onion, sliced
  3. 1 Tbsp.Olive oil
  4. Sea salt and black pepper
  5. 2 1/2 C.Cooked chicken, shredded
  6. 3/4 C.Fresh flat leaf parsley, roughly chopped
  7. 2 piecespita bread
  8. 1 containerhummus
  9. 1/2 headromaine lettuce, chopped
  10. 1/2 C.Fresh mint leaves, roughly chopped
  11. 1large lemon

Cooking Instructions

    In a large bowl toss together the tomato, onion, oil, and 1/4 tsp. Add the chicken and parsley and toss to combine.

    Split the pitas to make 4 rounds. Spread each with hummus then top with lettuce and mint and squeeze the juice of half the lemon on top.

    Spoon the chicken salad on top of the lettuce. Serve with the remaining lemon.
