Ingredients

35 to 40 minutes
Serves 4 servings
  1. 500 gramsdosa batter (about 2 cups)
  2. Salt to taste
  3. For the green layer:
  4. 1large green bell pepper
  5. 1/2 cupchopped cilantro
  6. 1 tablespoonpeanuts
  7. 4green chilies
  8. 1-inch piece of ginger
  9. 1 tablespoonlemon juice
  10. Salt to taste
  11. 1/2 teaspoonblack pepper powder
  12. 2 teaspoonschickpea flour (besan)
  13. 2-3 dropsgreen food coloring
  14. 3 teaspoonschickpea flour (besan)
  15. For tempering:
  16. 4 tablespoonsoil
  17. 1 teaspoonmustard seeds
  18. 1/2 teaspooncumin seeds
  19. 3green chilies, chopped
  20. 9-10curry leaves
  21. 1 pinchasafoetida (hing)

Steps

35 to 40 minutes
  1. 1

    Blend all the ingredients for the green chutney together. Add 3 tablespoons dosa batter and mix well. The combination of chickpea flour and dosa batter helps it spread evenly.

    Add salt to the dosa batter. Pour water into a steamer and grease a plate with oil. Place the plate in the steamer to heat. Spread a thin layer of dosa batter on the plate. Steam for 6 minutes.

    Remove the plate and evenly spread the green layer filling on top. Steam again for 4 minutes.

    Now, spread another layer of dosa batter on top. Steam for 10 minutes.

    Check with a toothpick—if it comes out clean, the dhokla is ready.

    Heat oil and prepare the tempering. Spread it over the dhokla with a spoon and cut into square pieces.

    Serve with garlic chutney.
