CORN VADA is a very toothsome and kid-friendly evening snack. It is usually made of Indian corn that is slightly mature as the tender corn will not work well for preparing the vadas. Corn Vada is best eaten warm when it is crisp on the outside with a soft and chewy interior.

Assemble all the ingredients.

In a pan take 2 cup of water or as needed with a pinch of salt. Add the corn kernels and boil them for 10 minutes. Then turn off the flame and remove them from the pan.

Grind the boiled corn kernels to a coarse paste and transfer it to a bowl.

Add in boiled potatoes, gram flour, turmeric powder, chilli powder, cumin powder, coriander powder, ginger garlic paste, chopped onions, green chillies, salt and curry leaves.

Then mash the potatoes with the corn paste and mix it up with the other ingredients thoroughly so that everything is well combined.

Divide the mixture into 10-12 equal portions. Take a portion of the mixture and shape it into a round patti. Prepare patties with rest of the mixture.

Heat oil in a pan on medium flame. Slowly place the patties in hot oil and deep fry them on both sides till golden brown.

Drain on an absorbent paper.

Serve warm with tomato sauce or chutney of your choice.
